Restaurant chain eyes Princeton for growth

PRINCETON — Mercer County residents may soon have another choice when they go out to eat.

Development Authority Executive Director Janet Bailey said, “I can’t say too much because of the confidentiality involved, but I would say that eventually we will have an Olive Garden.”

At the meeting on Tuesday morning, Bailey told members that the restaurant chain was investigating the region because it is preparing to open a restaurant in Beckley. She believed that the opening of that restaurant would soon lead to one being constructed in Mercer County.

She added, “I’m not really allowed to say anything more, but I can tell you that they have been looking because of the tremendous growth in the area.”

Should Olive Garden open a restaurant in Mercer County, it would mark the first eatery of the Darden Restaurants group to open in the county. Other Darden restaurants include Red Lobster, LongHorn Steakhouse, Bahama Breeze, The Capital Grille, Eddie V’s Prime Seafood, and Seasons 52.

For now, the nearest Olive Gardens are located in Christiansburg, Va., and Charleston.
